1. Bun Thang (Thang noodle)
Bun Thang is the most sophisticated noodle of Hanoi people. It is made from more than 20 materials and requires a skillful and careful hand in cooking. The materials include fried egg, chicken’s breast, pork-pie, shrimp, ham, mushroom, variety of vegetables and herbs,… All of them have to be sliced into small yarns and put above the noodle. The broth made from ham and chicken bones has to be pure and slightly sweet but not too greasy. The bowl is eaten with vinegar, pepper, garlic, black pepper and shrimp sauce.
A great bowl of bun thang is not only tasty but well-decorated. This food is the most specialized way to show Hanoi’s characteristics: simple but exquisite.
2. Bun oc (shellfish soup and vermicelli)
Bun oc is one of the most favorite foods of Hanoi residents. The main material of this food is small shellfish taken from fresh water lakes in the city. They are carefully chosen and cleaned, then boiled to take the intestine. The broth must have tomatoes, ham bones, featured with a lot of different spices such as vinegar made from distiller’s grains, fat, pepper, glutamate, salt, sugar, chili… and some kinds of fresh vegetables.
When customers order the noodle, the owners just have to put shellfish, rarely-boiled noodle into the bowl then irrigate the soup to finish the dish. A dish of fresh vegetables, a dish of boiled down chili putted on the table will increase the tasty feeling of the noodle.
The best place to enjoy Bun Oc is in West Lake (Ho Tay), because the selfish taken from this lake is the best.
3. Bun Rieu
Bun rieu is meat rice vermicelli soup. Bun rieu in Hanoi is made from freshwater paddy crab taken found in rice paddy fields in Vietnam. The crabs are cleaned by being placed in clean water to remove dirt and sand. The crabs are pounded with the shell onto a fine paste. This paste is strained and the crab liquid is a base for the soup along with tomato.
The bowl of bun rieu is the combination of variety of colors, including white vermicelli, light brown crab paste, green Welsh onion, red tomatoes, and yellow fired tofu. It is served with shrimp sauce, fried onion and some of fresh herbs.
4. Bun doc mung (rice vermicelli soup with giant elephant ear)
This super simple dish is usually used for breakfast by people in Hanoi. It is mainly made from the corm of an herb called “dọc mùng” (giant elephant ear) and stew pick’s trotters. When eating, people out rice vermicelli into the bowl, then put some piece of pick’s trotter and moc (pureed pork balls) and “doc mung” above, then finally pour both made by stew bone and add a little green onion and peppers.
5. Bun dau mam tom (rice vermicelli with tofu and shrimp sauce)
This food is incredibly popular in Hanoi. You can find super simple stalls which have only some small chairs on any street in Hanoi, where they serve Bun dau mam tom. The key materials of this food are fried tofu and shrimp sauce. This kind of food doesn’t use broth. The rice vermicelli is made into small piece. When eating, they dip vermicelli and fried tofu into the shrimp sauce which had been made up with chili, sugar and lemon water and eat with Vietnamese balm leaves.
In the past, bun dau mam tom is only vermicelli, fried tofu with shrimp sauce. But now people add other materials such as boiled pork, different kinds of pork-pie, fried or boiled organ meats.
6. Bun cha (noodle with grilled pork)
Hanoi is the original home of bun cha. Bun cha is served with grilled fatty pork (chả) over a plate of white rice noodle (bún) and herbs with a side dish of dipping sauce. The sauce is made by fish sauce, vinegar, sugar and water. It is considered as the most important thing to make a great bun cha dish. It must be sweet enough, not too salty and have no smell of fish sauce. When eating, you dip rice noodle and herbs into the bowl of sauce and grilled pork and enjoy. You will never forget this amazing food.
